  • 1 cup cooked pasta Use rotini or penne for best results.
  • 1 cup diced vegetables Any combination; bell peppers, cucumbers, and cherry tomatoes recommended.

Dressing and Cheese

  • 1 cup favorite dressing Zesty Italian or creamy ranch are great choices.
  • 1 cup cheese Feta, mozzarella, or cheddar work well.

Preparation

  • Cook your pasta: Bring a pot of salted water to a boil and cook pasta until al dente, about 8-10 minutes.
  • Chop those veggies: While the pasta cooks, dice your vegetables.
  • Combine the pasta and veggies: Drain pasta and rinse with cold water, then combine with diced vegetables in a large bowl.
  • Dress it up: Pour dressing over the mixture and toss to combine.
  • Cheesy goodness: Add cheese and gently mix.
  • Cover and chill: Refrigerate for at least 30 minutes to allow flavors to meld.

Notes

Best enjoyed fresh, but can be made a day in advance. Add extra dressing if serving leftovers.
