  • 2 cloves garlic, minced Adds aromatic depth.
  • 1 can diced tomatoes Opt for fire-roasted for extra flavor.
  • 1 can black beans, drained and rinsed Packed with protein and fiber.
  • 1 can corn, drained Frozen corn can be used—thaw it first.
  • 1 packet taco seasoning Use your favorite brand or homemade.
  • 2 cups shredded cheese Cheddar and Monterey Jack recommended.
  • Tortilla chips or taco shells for serving Your choice of serving vehicle.

Preparation

  • In a skillet, pour a splash of oil and heat it up, then brown the ground beef.
  • Once browned, drain any excess fat and add the chopped onion and minced garlic, cooking until the onion is soft.
  • Stir in the diced tomatoes, drained black beans, corn, and taco seasoning; allow to simmer for 10 minutes.
  • Layer the beef mixture in a serving dish and top with shredded cheese.
  • Serve with tortilla chips or taco shells. Enjoy!

Notes

Taste test as you go for seasoning. Leftovers are great for lunch the next day or freezing for later meals.
