  • 8 oz Pasta (spaghetti, penne, or whole grain)
  • 1 lb Chicken breast (or plant-based option like chickpeas or tofu) For high protein meals
  • 1 cup Heavy cream (or lactose-free/coconut milk) For richness
  • 1 cup Cheese (sharp cheddar and mozzarella blend) Needs to be melty
  • 2 cloves Garlic (minced) Brings depth of flavor
  • 2 cups Mixed Vegetables (bell peppers, broccoli, etc.) Use what you have on hand
  • 1 cup Chicken broth To deepen flavor
  • 2 tbsp Olive oil For sautéing
  • 1 tsp Dried oregano Essential herb
  • 1 tsp Dried basil Essential herb

Instructions
 

Preparation

  • Get a large pot of salted water boiling. Add your pasta and cook until al dente, saving a cup of pasta water.
  • Heat olive oil in a large pan over medium heat. Sauté minced garlic until fragrant.

Cooking

  • Add bite-sized chicken pieces to the pan and cook until golden and cooked through.
  • Add vegetables to the pan and cook until tender.
  • Pour in cream and chicken broth. Let it bubble gently, then add salt, pepper, and herbs. Stir to combine.
  • Drain the pasta and add it to the creamy mixture, stirring to coat. Add reserved pasta water to adjust the sauce consistency.
  • Stir in cheese until melted and well mixed.
  • Taste and adjust seasoning as desired.
  • Serve hot, garnished with fresh herbs or a drizzle of olive oil.

Notes

Leftovers improve with time and can be reheated with a splash of broth to maintain moisture. Experiment with ingredients based on what's available.
