Preparation

  • Pour the whole milk into a heavy-bottom pot and heat over medium-low heat until it reaches about 180°F.
  • Remove the pot from heat and let it cool down to about 110°F.
  • In a bowl, mix about a cup of the warm milk with 1/2 cup of your plain yogurt until well combined, then gradually whisk this mixture back into the pot.
  • Cover the pot and place it in a warm environment, like an oven with just the light on, maintaining the temperature around 110°F.
  • Let it rest for about 6-12 hours, depending on how tangy you prefer your yogurt.

Final Steps

  • Taste the yogurt and add a pinch of salt if desired.
  • For thicker yogurt, strain it through a cheesecloth-lined strainer for 1-2 hours.
  • Spoon your homemade yogurt into jars or containers and refrigerate. It will last about two weeks.

Notes

Patience is key! Allow the yogurt enough time to ferment for the best results. Store in an airtight container.
