Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Sauté the onion until translucent, about 5 minutes, then add minced garlic and cook for another minute.

Cooking

  • Pour in the vegetable broth and add the chopped vegetables.
  • Stir in dried herbs, along with salt and pepper.
  • Bring to a boil, then lower the heat and let it simmer for about 20 minutes until veggies are tender.
  • If desired, blend in cream or coconut milk before serving for a creamier texture.

Serving
