Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, mix olive oil, minced garlic, salt, pepper, oregano, and paprika.
  • Add chicken breasts, coating them with the spice mix.
  • In a separate bowl, mix diced potatoes with half of the Parmesan cheese, salt, and pepper.
  • Place chicken and potatoes in a baking dish, sprinkling the top with remaining Parmesan cheese.
  • Bake for 30-35 minutes until chicken is done and potatoes are soft.
  • Garnish with fresh parsley and serve.

Notes

For best results, let chicken marinate for at least 30 minutes. Serve with a green salad or steamed broccoli for a complete meal.
