  • 2 cups cooked chicken Shredded or cubed; a rotisserie chicken works great.
  • 1 package frozen mixed vegetables No chopping needed! A mix of carrots, peas, and corn is ideal.
  • 1 cup crushed crackers For a crunchy topping; avoid spicy varieties.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, mix together the cream of mushroom soup, shredded cheese, cooked chicken, and frozen mixed vegetables until combined.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Top with crushed crackers evenly.

Baking

  • Bake in the preheated oven for about 25-30 minutes, until hot and bubbly.
  • Let sit for a few minutes before serving to set.

Notes

Can add garlic or onion powder for extra flavor. Letting the casserole sit after baking helps set it. Leftover can be stored in an airtight container for 3-4 days.
