  • 4 pieces Chicken Breast or thighs if you prefer
  • 2 tablespoons Olive Oil for sautéing
  • 3 cloves Garlic minced, fresh for best flavor
  • 1 medium Onion diced
  • 2 cups Bell Peppers sliced, any color
  • 1 can Canned Tomatoes diced preferred
  • 2 teaspoons Italian Herbs such as oregano and basil
  • to taste Salt and Pepper for seasoning

Cooking

  • Heat olive oil in a skillet over medium heat. Sauté diced onions until translucent.
  • Add minced garlic and sauté until fragrant, being careful not to burn.
  • Season chicken pieces with salt, pepper, and optionally paprika. Add to the pan and cook each side for 6-7 minutes until golden.
  • Once chicken is cooked through, add sliced bell peppers to the skillet.
  • Stir in canned diced tomatoes and sprinkle Italian herbs on top. Let it simmer for about 10 minutes.
  • Adjust seasoning according to taste and serve with rice, pasta, or a salad.

Notes

Try using pre-diced vegetables for convenience! Also, let the dish sit for a few minutes before serving to enhance the flavors.
