  • 2 cups cooked chicken (shredded or cubed) Use leftovers or rotisserie chicken.
  • 1 cup broccoli florets Fresh or frozen works.
  • 1 cup carrots, diced Adds color and nutrition!
  • 1 cup bell peppers, any color Sweet and vibrant veggies.
  • 1 cup shredded cheddar cheese Essential for the cheesy goodness.
  • 1 cup low-sodium cream of chicken soup For a creamy casserole texture.
  • 1 cup cooked rice or quinoa Choose based on preference.
  • 1 teaspoon garlic powder For flavor enhancement.
  • Salt and pepper to taste Essential for flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine cooked chicken, broccoli, carrots, bell peppers, rice or quinoa, garlic powder, cream of chicken soup, and half of the cheese. Season with salt and pepper.

Baking

  • Pour the mixture into a greased casserole dish. Top with the remaining cheese.
  • Bake for 25-30 minutes until bubbly and golden.

Serving

  • Let it cool for a few minutes before serving.
  • Optional: Garnish with chopped parsley for presentation.
