  • 1 large onion Finely diced for aroma.
  • 4 cloves garlic Minced.
  • 1 cup mixed vegetables Frozen or fresh; peas, carrots, and corn are ideal.
  • 2 tablespoons olive oil For cooking.
  • Spices (salt, pepper, smoked paprika, cumin) Season to taste.
  • Fresh herbs (optional) For garnish.

Preparation

  • Start by chopping your onion and garlic.
  • In a large pot or skillet, add olive oil over medium heat.
  • Cook chicken for about 7-8 minutes until golden brown on both sides.
  • Add onions and sauté until translucent, then add garlic and cook for another minute.
  • Stir in spices, then add rice and mix well.
  • Pour in the chicken broth and mixed vegetables, stir to combine.
  • Bring to a gentle boil, reduce heat to low, and cover.
  • Let it simmer undisturbed for about 20 minutes.
  • After 20 minutes, remove from heat and let it sit for another 5 minutes without lifting the lid.
  • Fluff the rice with a fork and serve.

Notes

Leftovers can be stored in an airtight container for 3-4 days. Reheat in the microwave with a sprinkle of water to keep it moist.
