  • 2 cans 15 oz each of chickpeas, drained and rinsed Chickpeas are the protein powerhouse here.
  • 1 cup shredded cheese Preferably mozzarella with a bit of cheddar for zing.
  • 1/2 cup Greek yogurt Adds creaminess without being overly heavy.
  • 2 cloves garlic, minced Brings depth and wonderful aroma.
  • 1 teaspoon dried oregano For that hint of Mediterranean flair.
  • 1 teaspoon smoked paprika Adds warmth and a little kick.
  • to taste salt and pepper Key for proper seasoning.
  • Fresh parsley for garnish, optional Adds a pop of color and freshness.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine drained chickpeas, minced garlic, shredded cheese, Greek yogurt, oregano, smoked paprika, salt, and pepper.
  • Mix until well blended, then transfer to a greased baking dish.

Baking

  • Lightly grease a baking dish and pour in the chickpea mixture.
  • Spread it out evenly with a spatula.
  • Top with extra cheese if desired.
  • Bake for 25-30 minutes until bubbly and golden.
  • Let rest, garnish with parsley, then serve.

Notes

This dish makes for great leftovers and can even be frozen. Add different veggies or spices for a twist.
