Instructions
 

Preparation of Eggs

  • Bring a pot of water to a gentle simmer.
  • Gently lower in the eggs and set a timer for 6-7 minutes.

Ice Bath

  • Transfer the eggs to an ice bath after cooking to stop the cooking process.

Preparing Avocado

  • Slice the avocado in half, remove the pit, and scoop into a bowl.
  • Mash the avocado with a fork, adding salt, pepper, and olive oil to taste.

Toast the Bread

  • Toast the bread slices until golden.

Assemble the Toast

  • Spread the mashed avocado on the toasted bread.
  • Peel and slice the eggs, placing one egg on each slice of toast.

Garnish

  • Scatter halved cherry tomatoes and toasted pine nuts over the toast.
  • Add a drizzle of olive oil, herbs, and red pepper flakes if desired.
